Mantis Kitchen was born from the dream of following my vocation, cultivating happiness within, and supporting the vitality of our foodshed. I have been intimately connected with food my whole life: growing up gardening, preserving, and cooking to working in restaurants and bakeries, to living and working on farms, and feeding people for over a decade in and around the backcountry. These passions have led me to this next adventure. I am looking forward to serving the community, the land, and myself through providing nutritious and delicious food to people when and where they need it.
Mantis Kitchen is happily tucked into the Sherman Courtyard at 1st and G behind the Velveteen in historic downtown Salida, CO. We are excited to start regular business hours to serve food to our community in a beautiful, shaded, convenient downtown location. Look for us serving weekday lunches, weekend dinners and late night food, as well as a bustling fun BRUNCH on Sundays! We will also be at the Farmers Market in Alpine park on Saturdays from 8-12 with freshly made breakfast sandwiches, cookies, scones, granola, and refreshing drinks. Find the mantis in the wild soon!

Fresh made from 100% locally grown and milled flour.
We scored organic frozen peaches from Hotchkiss, cooked them down, added some LazEwe green chili goat cheese, and offer them up with love for you

Pasta made in Bouder, CO with locally grown and milled flours. Taste the difference! Paired with mushrooms from Tooth and Gill and house made arugula pesto.

We made orange marmalade this winter to bring you this herbaceous delight. Featuring a simple syrup made with Rocky Mountain Garlic spring thyme.

It takes a village and in this case, a whole bioregion. We could not offer this kind of food without all of the people in place, working to cultivate, deliver, tend, harvest, source, and dream it here, now. This is a special privilege, working with all of these other people honoring their craft. Thank you to each and every one of you.
We believe in giving back to our Earth. All of our single use items are compostable and we provide a customer facing compost bin at every location. We work with local Elements Compost to help nourish the land and build soil by giving our nutrients back to the Earth.
Our menu strives to feature local, seasonal abundance. To us, this means something different since we are located in a high elevation, arid climate. Be it local mushrooms, a whole row of arugula, joyfully tended to animals, or a small oddity sought out to help other ingredients shine, know that there is a devotion to sustainability and ethically sourced items.
The Mantis is lucky to find a home in the Sherman courtyard alongside the Velveteen bar. It is a treat to be in this community minded, shady location. We are also at the Saturday Farmer's Market in Salida, serving up great food alongside some of our producers and community members. Stay tuned for new locations where you can find Mantis in the wild.
